Enjoying dessert is one of life’s sweetest moments. Whether you reach for a cookie, a slice of cake, or a piece of pie, every bite can feel like a small escape. The next time you want something special, try making macarons. These elegant sandwich cookies bring a touch of sophistication to any celebration with their beautiful colors, smooth tops, crisp shells, and soft, chewy centers.
Although macarons are often considered difficult to prepare, following the right steps makes the process much easier. With this detailed guide, you can learn how to create these delicate treats at home. Unlike many baked goods, macarons do not depend on baking powder or other chemical rising agents. Their light texture comes entirely from properly whipped egg whites.
You can personalize your macarons by adding food coloring to create different shades or mixing flavored extracts into the filling for a unique taste. Once you understand the technique, the possibilities are endless.
Ingredients
Macarons
Makes about 30 macarons
1 ¾ cups powdered sugar
1 cup finely ground almond flour
1 teaspoon salt, divided
3 egg whites, room temperature
¼ cup granulated sugar
½ teaspoon vanilla extract
2 drops pink gel food coloring
Vanilla Buttercream
1 cup unsalted butter (2 sticks), softened at room temperature
3 cups powdered sugar
1 teaspoon vanilla extract
3 tablespoons heavy cream
Preparing the Macaron Shells
Place the powdered sugar, almond flour, and ½ teaspoon of salt into a food processor. Process the mixture on low speed until it becomes very fine. Pass the almond flour mixture through a fine sieve into a large bowl to remove any lumps and create a smooth texture.
In another large bowl, beat the egg whites together with the remaining ½ teaspoon of salt using an electric mixer. Continue mixing until soft peaks begin to form. Slowly add the granulated sugar and keep beating until the mixture becomes glossy and stiff peaks appear. The meringue should be firm enough that it stays in place when the bowl is turned upside down.
Add the vanilla extract and mix until combined. Add the pink gel food coloring and blend briefly until the color is evenly distributed.
Mixing the Batter
Add approximately one-third of the sifted almond flour mixture into the whipped egg whites. Gently fold with a spatula until incorporated. Continue adding the remaining almond flour mixture in portions, folding carefully each time.
After the final addition, continue folding slowly until the batter reaches the correct consistency. The mixture should flow smoothly like ribbons, and when lifted with a spatula, it should allow you to draw a figure-eight shape without breaking.
Transfer the macaron batter into a piping bag fitted with a round piping tip.
Shaping and Resting the Macarons
Place small dots of batter in the four corners of a baking sheet, then press parchment paper over the dots to keep it securely in place.
Pipe the batter onto the parchment paper, creating circles about 1½ inches (3 cm) wide. Leave at least 1 inch (2 cm) of space between each macaron.
Tap the baking sheet firmly against a flat surface about five times to remove trapped air bubbles.
Allow the piped macarons to rest at room temperature for 30 minutes to 1 hour, until the surface feels dry when lightly touched.
Baking the Macaron Shells
Preheat the oven to 300°F (150°C).
Bake the macarons for around 17 minutes, until the edges develop their signature “feet” and the shells lift away from the parchment without sticking.
Remove the shells from the oven and place them on a wire rack. Let them cool completely before adding the filling.
Making the Vanilla Buttercream
Place the softened butter into a large bowl and beat with a mixer for about 1 minute until it becomes light and fluffy.
Add the powdered sugar gradually and continue mixing until fully combined. Add the vanilla extract and blend well.
Pour in the heavy cream one tablespoon at a time, mixing after each addition until the buttercream reaches your preferred consistency.
Transfer the finished buttercream into a piping bag fitted with a round tip.
Assembling the Macarons
Pipe a small amount of buttercream onto one macaron shell. Place another shell on top to create a sandwich shape.
Repeat the process with the remaining shells and filling until all macarons are assembled.
For the best texture and flavor, place the finished macarons in an airtight container and let them rest for 24 hours. This resting period allows the flavors to develop and the texture to become perfectly balanced.
Enjoy Your Homemade Macarons
After resting, your homemade macarons are ready to enjoy. Their crisp outer shells, soft centers, and creamy filling make them a beautiful dessert for any occasion.
