What Is Cream Caramel Pudding?
Although the names are sometimes used interchangeably, there are small distinctions between flan and crème caramel.
Cream caramel is a traditional French dessert made from a smooth custard with a sweet caramel topping. It’s prepared using milk, eggs, sugar, and usually flavored with vanilla. After baking, the dessert is inverted onto a serving plate, revealing the glossy caramel layer.
Flan, on the other hand, can be both sweet and savory. Originating in Roman times, flans were served as either a main course or dessert. Sweet flans resemble cream caramel, while savory versions are similar to quiches and are often cut into squares.
Tips for Perfect Cream Caramel
Unlike Vietnamese flan, which often has tiny bubbles, a classic cream caramel should be completely smooth. Avoid over-whisking to prevent bubbles.
The custard should still wobble slightly when removed from the oven; residual heat will finish the cooking.
Use eggs at room temperature to prevent curdling when combined with the milk.
Straining the mixture is essential for a silky smooth texture.
Storing Cream Caramel
Keep cream caramel in the refrigerator for up to 4 days.
Make-Ahead Tip: This dessert is ideal for preparing in advance. Once cooled, cover it tightly with plastic wrap and store in the fridge until ready to serve.
Ingredients
Sugar: 70g (1/3 cup)
Water: 20ml (4 tsp)
Hot water: 15ml
Eggs: 4
Egg yolks: 2
Sugar: 70g (20g + 50g)
Milk: 420ml (1 ¾ cups)
Heavy cream: 100ml (½ cup)
Vanilla extract: 1 tsp
Instructions
In a small saucepan over medium heat, combine sugar and 4 tsp of water. Stir until it melts and turns a deep caramel color. Add the hot water carefully and mix well.
Pour the caramel into a baking dish, spreading it evenly to cover the bottom. Let it cool.
Meanwhile, prepare the custard. In another saucepan, combine milk, sugar, and vanilla extract, stirring until the sugar dissolves. Allow to cool slightly.
In a separate bowl, whisk together egg yolks and sugar. Gradually add the cooled milk mixture to the eggs, mixing gently.
Pour the custard through a fine sieve into another container, then strain once more over the caramel in the baking dish.
Place the baking dish in a water bath, cover with foil, and bake at 150°C (300°F) for 50 minutes.
After baking, carefully invert the dessert onto a serving plate.
Slice with a sharp knife and serve immediately.
Enjoy this classic, silky-smooth French dessert that’s sure to delight every palate!
